Beef Tenderloin a la Coke

This is one of the great dishes that will work for any occasion.

  • 2 lbs Grass-fed beef tenderloin ((cubed, about 2" thick))
  • 1 can Coca-cola
  • 3 TBS Bourbon
  • 2 TBS Lime juice
  • 1/2 tsp Red pepper flakes
  • 2 TBS Extra virgin olive oil
  • 4 cups Wild rice, cooked

Preparation

  1. In a medium bowl, add beef tips.

  2. Pour coke, bourbon, lime juice, and pepper flakes on top and stir to incorporate.

  3. Make sure that the steak tips are completely covered.

  4. Transfer beef tips with the sauce into a large plastic bag.

  5. Seal and refrigerate for 1 hour.

Cooking the beef tenderloin

  1. In a large skillet over medium-high heat, add oil.

  2. When oil starts to smoke, add beef tips.**

  3. Cook for 5 minutes, stirring occasionally.

  4. Serve over a bed of wild rice.

**Make sure you shake off any excess marinade off the beef tips. Otherwise, you’ll end up boiling the tenderloin rather than sautéing the meat.
